- Mix above ingredients into a
gallon size Ziplock Freezer Bag. "Do
not add roast at
this point"
- Using a meat slicer, slice the
roast into about 1/8 inch thick slices.
- Begin adding meat slices into
the gallon freezer bag of ingredients.
When adding slices, be sure and massage bag
frequently to evenly coat slices
with mixture.
- Close freezer bag while
sealing out all excess air. Massage meat a final
time
to ensure all slices are evenly coated with spice
mixture.
- Place freezer bag in
refrigerator for a minimum of 48 hours to
adequately marinade
the beef or venison strips.
- Remove meat strips from
freezer bag and place strips on the trays of an
approved
Dehydrator. Be sure to leave space between
slices, and they are not touching one
another. To reduce meat strips from sticking to
tray, you can "lightly" spray trays
with
Pam cooking spray..
- Dehydrate meat strips for the
amount of time recommended by your dehydrator's
manufacturer. Some dehydrators may heat at a
higher or lower temperature. Some
operate on solely heat, while others may be heat
driven with a fan which can cause
variations in dehydrating time required.
- When strips have been properly
dehydrated, remove strips from trays. A spatula
may be necessary to help lift strips from trays.
- Using approved kitchen sheers,
cut the dehydrated strips into the desired length
and width.
